I make a considerable amount of ice cream on a weekly basis, most of which ends up here on the blog. With bathing suit season upon us however, I’ve gotten some requests for healthier frozen treats from my regular taste tasters. Fair.
Virginia has been especially unbearable this month so I’ve been looking for new and tasty ways to keep cool. Since I find nothing to be quite as refreshing as a crisp, cool glass of lemonade during hot summer days, I invested in some popsicle molds and got to work.
The great thing about popsicles is that you can get as creative as you want. June is the tail end of strawberry season and the front end of raspberry season so I decided to include them in this week’s popsicles to make them a little healthier! When it came to choosing lemonade, I used Simply Lemonade for my popsicles but you could easily swap it for homemade alternatives if you are feeling crafty.
Next up? I’m thinking I need to try some adult-only popsicles, starting with “15 Boozy Popsicles to cool down with this summer”.
- ½ Cup strawberries
- ½ Cup raspberries
- ¾ Cup lemonade
- 1 Tablespoon honey
- Blend ingredients until liquid with a few chunks
- Pour into popsicle molds and freeze overnight
