Malted Milk Ball Brownies

In my move last month I stumbled upon two bags of chocolate malt candies in the back of my pantry. Malted milk balls, much like malted milk, have always confused me. When I first ordered a ‘malt milkshake’, no one seemed able to explain to me what the malt was and what it added to the shake. Of course, this dilemma of liking something but not understanding why is not a new one but rediscovering the chocolate malt candy made me think that perhaps it was time I did my own research and fill the gap in my malt knowledge once and for all.

Malted treats often have a nutty flavor associated with them. According to wiseGeek, this flavor comes from the grains that make it up.

Barley grains are allowed to germinate after harvest, which changes the sugar composition of the grain, in the same sense that germinated corn becomes more suitable for distillation. The malted barley grain is carefully dried and ground into a powder for confectionery use. Other dry ingredients, such as wheat flour and powder milk, are then added to the malted barley powder to form malted milk.

Okay. Enough nerding out on the science behind malted milk for today and back to my newfound stash of malted milk candy.

I knew I wanted to play up the candy’s crunchy center and immediately thought of my favorite gooey brownies. When I imagine my ideal brownie, I want something moist in the middle with a nice crisp topping, solid enough to hold its structure while still being nice and gooey. If this sounds like your ideal brownie you are in for a treat!

  • ½ Cup (70g) flour
  • ⅓ Cup (25g) cocoa powder
  • ¼ Teaspoon salt
  • ¼ Teaspoon baking powder
  • 1 Cup (200g) granulated sugar
  • ½ Cup butter, melted
  • 2 Large eggs
  • 1 Teaspoon vanilla
  • ½ Cup chocolate malted milk ball candy, chopped

Recipe (adapted from allrecipe’s ‘Best Brownies’)

  • Preheat oven to 350 degrees
  • Butter an 8 by 8 pan and set aside
  • In medium bowl, sift flour, cocoa, salt and baking powder together and whisk to combine
  • In a large bowl, beat sugar and butter
  • Mix in eggs and vanilla to the wet ingredients
  • Gently mix dry ingredients into wet
  • Pour ½ the batter into prepared pan
  • Sprinkle layer of chocolate malted milk candy
  • Cover with rest of batter
  • Bake for 25 to 30 minutes or until a toothpick inserted into the middle of it comes out clean
