Beet Apple Breakfast Smoothie

I know I shouldn’t say I don’t like a certain food without giving it 7 chances, but beets are not my favorite. They are so hip and mainstream that eating beets isn’t even an adventurous feat but for some reason, I can’t wrap my brain around it.

This beet smoothie is so packed with delicious fruits that I never even noticed the beets! Well, except for the fantastically bright color that the smoothie took on.

Now, I know what you’re thinking. Hiding my beets in a smoothie is not the same as developing an affinity for them. I hear you. I’m calling this baby steps in the right direction. One of these days I just know that my mom will offer me beets at dinner and I’ll say yes. Maybe. In the meantime, I’ll keep blending my beets with a few of my favorite smoothie ingredients: strawberries and bananas! And apples. In fact, I called this smoothie a beet apple smoothie because apple is the dominant flavor once all is said and blended.

Ingredient

  • ½ Beet, raw and peeled
  • 1 Apple, skin on but cut off the core (I went with golden delicious)
  • 1 Banana
  • 1 Cup frozen strawberries
  • 1 Teaspoon agave
  • 1 Cup water

  • Combine all ingredients in blender, blend until smooth
  • Enjoy immediately, refrigerate leftovers
